Mini Peanut Butter Cups

  1. In a large bowl, beat first 4 ingredients with mixer on medium speed until combined. Add the egg, milk and vanilla.
  2. Beat well. Combine flour and baking soda. Add to egg mixture, beating well. Shape dough into 1-inch balls. Roll in the 1/4 cup sugar.
  3. Place 2-inches apart on ungreased cookie sheets. Bake in a 350u0b0 oven for 10 minutes or until lightly browned.
  4. Remove from oven. Immediately press half of a peanut butter cup, cut side down, into each cookie, about 1/2-inch from bottom edge. Cool for 1 minute. Transfer cookies to rack. Cool.
