Mini Peanut Butter Cups
- 1/4 c. peanut butter
- 1/2 c. shortening
- 1/3 c. granulated sugar
- 1/3 c. packed brown sugar
- 1 egg
- 2 Tbsp. milk
- 1 tsp. vanilla
- 1 1/3 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/4 c. granulated sugar
- 30 bite size chocolate covered peanut butter cups, halved lengthwise
- 1 (16 oz.) can vanilla frosting
- In a large bowl, beat first 4 ingredients with mixer on medium speed until combined. Add the egg, milk and vanilla.
- Beat well. Combine flour and baking soda. Add to egg mixture, beating well. Shape dough into 1-inch balls. Roll in the 1/4 cup sugar.
- Place 2-inches apart on ungreased cookie sheets. Bake in a 350u0b0 oven for 10 minutes or until lightly browned.
- Remove from oven. Immediately press half of a peanut butter cup, cut side down, into each cookie, about 1/2-inch from bottom edge. Cool for 1 minute. Transfer cookies to rack. Cool.
