Sweet Potato Chili

• SWEET POTATO CHILI
• cherylschaffer
• 2 Tbsp oil
• 1 c choppped onion
• 1 c chopper pepper
• 1 or 2 chopped jalepenos
• 1 15 oz can tomato sauce
• 1 c. pineapple chunks or I can undrained
• 1 1/2 libs sweet potatoes - peeled 1" cubed
• 2 large granny Smith apples - peeled chunked
• 2 1 lb cans kidney beans/caneloni beans
• 2 tsp chili powder
• 1 tsp chipolte chili powder
• 2 t cumin
• 1/2 t salt
• 1 t coriander

1. saute onion and pepper 5 min. Add spices saute 1-2 min. Add remaining ingredients - bring to a boil reduce heat and simmer 45 minutes or more until potatoes are tender. Check for salt
