Crunchy Sausage Casserole
- 2 (6 oz.) pkg. long grain and wild rice mix
- 1 lb. bulk pork sausage
- 1/2 lb. ground beef
- 1 (8 oz.) can sliced water chestnuts, drained
- 1 large onion, chopped
- 1 (8 oz.) can sliced mushrooms, drained
- 3 Tbsp. light soy sauce
- 3 to 4 stalks celery, chopped
- 3/4 c. red and green bell peppers, chopped or cut into thin strips
- 1 (2 oz.) pkg. sliced almonds
- Cook rice according to package directions; set aside.
- Brown sausage and ground beef in skillet, stirring until crumbly; drain. Combine rice and meat mixture; add all other ingredients except almonds, and mix thoroughly.
- Spoon into ungreased 2 or 3 quart casserole; sprinkle with almonds.
- Bake at 325u0b0 for 50 minutes. Yields 6 to 8 servings.
