Breaded Pork Cutlets
- 7Large slices High-quality sandwich bread.crust removed cut into 3/4cubes(about 4cupsTotal. 2Large eggs 1/2 cups unbleachedwhite flour 2cups Plus 1 tablespoon of oil 1 pork tenderloin(11/4ponds)
- trimmed of fat and sliver skin
- cut on sngle into 4 equal pieces
- saltand pepper to tast.1lemon cut into four's 2 tablespoons of chopped parsley
- 2tablespoons of capers (rinsed) 1large hard cookegg (yolk and whiteSeparatedand passed separatelythougha fine-meshstrainer
- you will need the breadcrumbs and eggs into bowls so that you can put the pork cutlets whie you are doing this heat oil into the dutch oven over mediumtohigh heat untill it registers to 375degreeds thencooks on both side 1 to 2min.perside thenput each cutlet on papertowel. then places each cutlets on plate and do theremaining cutlets. Garnish and serve immediately
