Salmon Soup With Fresh Herbs And Bacon
- 1/2 lbs salmon
- 2 tbs butter
- 1 tbs olive oil
- 1 medium onion, diced
- 2 garlic cloves, crushed
- 3 potatoes, diced
- 3 slices bacon
- 3 tbs flour
- 1/2 tsp hungarian paprika
- 32 oz chicken stock
- 1/2 lemon juice
- 1 tsp dill
- 1 tsp tarragon
- 1 tsp thyme
- 1/4 cup dry white wine
- 1/4 cup heavy cream
- First salt and pepper the salmon, wrap it into aluminium foil and bake it for 20 minutes, on 350F.
- Put the butter and oil into your favorite pan, heat them together, once it's hot add the bacon. When the bacon is crispy, take them out. Add onion, garlic and sautee them until they are fragrant. Add celery and sprinkle the flour on top of this mixture. Quickly stir the flour, make sure it doesn't burn. Add the chicken stock, potatoes, fresh green herbs as well as the red paprika and cook it for 30 minutes.
- Once the salmon is baked, take off its skin, cut it into small pieces and add them to the soup with the bacon, lemon juice and wine. Add salt and pepper if necessary. Pour heavy cream into the soup and on small heat cook it for another 30 minutes.
