Carrott Cake
- 1 3/4 c. plain flour (sifted)tttt1 1/2 c. Sugar
- 1 1/4 tsp. Baking Powdertttt1 1/4 tsp. Baking soda
- 1 1/2 tsp. Cinnamonttttt/4 tsp. Salt
- 1 c. applesaucettttt Eggs beaten or Egg Beaters
- 1 1/2 c. finely grated carrots (3 carrots)tt1/2 c. crushed pineapple with juice
- 1 tsp. Vanilla flavoring
- Cream Cheese Frosting
- 1 - 3 oz. Package Cream Cheese, softened
- 1 T. Butter, softened
- 1 tsp. Vanilla Flavoring
- 2 c. Sifted Confectioners Sugar
- Milk
- Water
- Carrot Cake
- Beat until moist; with electric beaters approximately 2 minutes. Pour into greased and floured 9x11 pan. Bake in 325 degree preheated oven for approximately 35 minutes. Cool before frosting.
- Cream Cheese Frosting
- In small mixing bowl, combine Cream Cheese, butter & Vanilla. Beat at low speed till light. Gradually add sugar (1/2 c. @ a time), beating until fluffy and all sugar is added. Add just a few drops of Milk to make it spreading consistency.
