Reduced Calorie Raspberry Filled Muffins

  1. Preheat oven to 400u0b0.
  2. Line 12 muffin cups with paper liners. In bowl, using electric mixer, cream margarine with sugar until light and fluffy.
  3. Add milk, egg and extract; beat until combined. Combine flour, baking powder and stir into margarine mixture. Fill each muffin cup with equal amounts of batter.
  4. Using bottom of 1 teaspoon measure make indentation in top of each muffin. Fill each indentation with 1 teaspoon raspberry spread.
  5. Bake 20 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool.
  6. Makes 12 muffins, 120 calories each.
