Chicken Pollo Bolo W/ Prosciutto

  1. Step 1
  2. Preheat oven 375
  3. "roux"
  4. In medium sauce pan melt butter over medium heat.
  5. add 1/2 cup flour
  6. cook until paste is formed
  7. Step 2
  8. add sage and chicken stock
  9. mix well bring to biol then reduce heat and set aside
  10. Step 3
  11. "Breading"
  12. Add flour to bowl or plate
  13. add eggs and milk to seperate bowl Mix well set aside
  14. In Separate bowl or plate add bread crumbs
  15. Step 4
  16. Cut chicken breast in half Horizontally "Butterfly"
  17. Step 5
  18. Heat half oil over Medium heat in LARGE Saute pan
  19. Step 6
  20. "Breading chicken"
  21. Take cut chicken breast
  22. flour then egg wash then bread crumbs
  23. Step 7
  24. Add breaded chicken to hot oil
  25. cook both sides until brown
  26. Set Aside Drain oil from saute pan
  27. Step 8
  28. heat saute pan on high heat
  29. add cooked chicken breast to saute pan pore wine in pan just to cote the bottom of pan
  30. reduce wine
  31. Step 9
  32. add enough chicken stock to cover chicken reduce until semi thick.
  33. Step 10
  34. add 1/2 chick breast to medium baking pan
  35. place one piece of Prosciutto
  36. on each piece of chicken
  37. add 2 cups mozzarella over chicken
  38. Step 11
  39. place rest of chicken in pan on top of other like a sandwich
  40. Step 12
  41. in saute pan add rest of chicken stock and marinara
  42. bring to simmer add salt and pepper to taste. Put 1/4 cup of mozzarella in and mix
  43. pour sauce over chicken breast.
  44. step 13
  45. add Parmesan and rest of mozzarella on top of chicken
  46. step 14
  47. Bake for 20 minutes or until cheese is fully melted
