Spinach Pie
- 1/4 c olive oil
- 1/2 c chopped onion
- 1/3 c green onion
- 2 lbs fresh spinach washed/chopped2
- T dried dill weed
- 1/4 c finely chopped parsley
- 1/2 tsp salt, pepper
- 1/3 c milk
- 1/2 lb feta crumbled
- 4 eggs lightly beaten
- 1/2 lb butter melted
- 16 sheets phyllo
- Heat olive oil 10-12 "
- Add onions.
- Stir in spinach.
- Cover lightly, cook 5 "
- Add salt, pepper, and dill.
- Stir constantly until most all liquid is gone and spinach sticks lightly.
- Put in large bowl, add milk and cool to room temperature.
- Add cheese and slowly beat in eggs. Taste.
- Preheat oven to 300 degrees.
- Melt butter. Line dish with phyllo 12x 7. Press edges firmly. Brush phyllo with 2-3 tsp butter.
- Continue 8 layers. Spread mixture and repeat phyllo.
- Trim excess.
- Cook 1 hour until pastry is lightly browned.
