Summer Bean And Shrimp Salad
- 1 can red beans
- 1 can black beans
- 1 can white beans
- 1-1/2 lb cooked shrimp
- 1 bunch of cilantro - chopped
- 1 small bunch of parsley- chopped
- roasted corn kernels from 4 ears of corn
- 1 small finely chopped jalapeno pepper or 1 small finely chopped habanero if you like heat
- Dressing:
- 1/2 cup fresh lime juice
- 1/2 cup vegetable oil
- 1 tablespoon balsamic vinegar
- 2 large cloves of garlic
- 1 cup crumbled feta cheese
- Roast corn under a broiler or on a grill until charred. Cool and remove kernels from corn.
- Remove shells and tails from shrimp and cut up into bite-size pieces.
- Wash and drain beans and place in large bowl. Add shrimp, cilantro, parsley and hot pepper and corn. Mix well.
- Make dressing. Place all ingredients in a small jar and shake well. Pour over bean mixture and toss.
- Toss crumbled feta on top and serve.
