Pasta With Carbonara Sauce
- 4 eggs
- 1/4 c. butter
- 1/4 c. whipping cream
- 1/2 lb. prosciutto in 1/4in chunks or thick bacon
- 1lb. spaghetti or angel hair pasta
- 1 c. grated parmesan or romano cheese, divided
- 1/4 c. snipped parley
- Salt and Black pepper
- 1) Let eggs, butter, and cream stand at room temperature for 2-3 hours
- 2) Cook bacon or prosciutto chunks in skillet until crispy. Remove and drain on a paper towel
- 3) Heat an oven-proof serving dish in a 300 degree oven
- 4) Beat eggs and cream together until just combined
- 5) Add pasta to salted, boiling water and cook to directions or taste. Drain well and keep hot. The pasta actually helps cook the sauce.
- 6)Use same pot used to boil pasta to heat butter until hot
- 7) Add egg/cream mixture and 2/3 c. of cheese, then stir together, do not overcook
- 8) Add bacon to sauce, season with salt and pepper, and return pasta to pot and toss to coat
- 9) Turn pasta/sauce mix into hot serving dish and top with parsley and remaining cheese
