Citrus Peach Granita

  1. Using a vegetable peeler, remove rind from orange and lime. Combine rinds, water, sugar and glucose in a medium pan, and stir over low heat without boiling until sugar had dissolved. Simmer uncovered without stirring for 5 minutes, and cool. Strain sugar syrup into a,large bowl and remove the rinds.
  2. Blend or prcess the peaches until smooth, stir in juices with sugar syrup.
  3. Pour into 20x30cm lamington pan, cover and freeze for 30 minutes.
  4. Stir mixture with a fork, and return to freezer for 1 hour.
  5. Stir mixture again, cover and freeze until firm.
  6. Serve in tall glassed with added lime.
