Leon'S Vegetable Casserole
- 1 pkg. Uncle Ben's quick cooking long grain and wild rice
- 1/2 c. each, cut up: red cabbage, yellow squash, carrots, zucchini, cauliflower, broccoli and mushrooms
- 1/3 c. white wine
- 1/3 c. water
- 2 Tbsp. soy sauce
- 2 Tbsp. margarine or butter
- 1 c. sour cream
- 1 c. grated Cheddar cheese
- 3/4 c. cashew nuts, broken
- Cook rice according to directions.
- Put in bottom of large casserole dish.
- Saute vegetables in butter to coat.
- Add wine, soy sauce and water; cover and cook over low heat 15 minutes.
- Use slotted spoon to transfer vegetables to casserole dish over top of rice.
- I add a small amount of the liquid.
- Spread sour cream on top of vegetables.
- Sprinkle Cheddar cheese on top of sour cream. Then top with cashews.
- Place under broiler until cheese melts. Serves 5 to 6 as a main dish or 8 to 10 as a side dish.
