Lemon Glazed Donuts With Coconut Frosting
- 2 cups cake flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1 tsp salt
- 3/4 buttermilk
- 3 tablespoon lemon juice
- 2 eggs lightly beaten
- 2 tablespoons butter melted
- 1 lemon zested
- Glaze
- 1 cup powdered sugar
- 1/4 milk
- 3 tablespoon lemon juice
- Frosting
- 2 Tablespoons softened butter
- 2 cups powdered sugar
- 1 tsp coconut extract
- 1/2 shredded coconut
- 3 tablespoons milk
- lemon zest
- Pre heat oven to 425. In a large bowl, combine flour, sugar, baking powder, and salt. Add in buttermilk, eggs, lemon juice and zest, beating until well combined. Fill each donut cavity about 2/3 full. Bake for 7-9 minutes until donuts spring back when touched. Let cool in pan for 5 minutes. In a separate bowl, prepare glaze, whisking until smooth. Dip each warm donut in glaze, covering both sides of the donut. Let set on a baking rack for a minute or two. In another bowl, prepare frosting. Spread on each donut once glaze has set.
