Crusty Grilled Skirt Steak

  1. Heat oil in a medium saute pan over medium heat till hot but not smoking.
  2. Add ginger & garlic. Saute 1 minute.
  3. Add Coriander, cumin,mustard, chile powder, cinnamon and cook, stirringtill spices begin to darken and raise strong aroma (2-3 minutes). Remove from heat.
  4. When cool, sprinkle steak with salt then rub all over with spices, pressing to adhere.
  5. Grill directly over the heat 4-5 minutes each side for medium rare.
  6. Slice thinly across the grain and serve.
