Crusty Grilled Skirt Steak
- olive oil, 2 tbsp
- garlic, 1 tbsp minced
- ginger, 1tbsp, minced
- coriander, 1tbsp fresh cracked seed
- mustard seeds, 1tbsp
- cinnamon, 1 tpsp crushed stick
- salt, Kosher, to taste
- skirt steak, 2 lb. cut into 8-oz. portions
- Heat oil in a medium saute pan over medium heat till hot but not smoking.
- Add ginger & garlic. Saute 1 minute.
- Add Coriander, cumin,mustard, chile powder, cinnamon and cook, stirringtill spices begin to darken and raise strong aroma (2-3 minutes). Remove from heat.
- When cool, sprinkle steak with salt then rub all over with spices, pressing to adhere.
- Grill directly over the heat 4-5 minutes each side for medium rare.
- Slice thinly across the grain and serve.
