Crunchy Sprout And Daikon Salad
- 1 c shredded purple cabbage
- 1 c shredded green cabbage
- 1/2 c shredded daikon radish
- 2 c shredded carrots
- 1 c sunflower sprouts
- 1 c pea shoots
- 2 T mint leaves
- 4 T Sesame Vinaigrette
- Vinaigrette
- 1/4 c rice vinegar
- 1 T clover honey
- 1/4 c sesame oil
- 2 T roasted peanut oil
- 2 T canola oil
- Kosher salt and pepper
- 1 T loiling water
- 2 T sesame seeds
- In a large bowl, combine all ingredients.
- Drizzle vinaigrette and toss to coat.
- Vinaigrette:
- Place all ingredients in a processor, except water and sesame seeds, process for 30 seconds.
- Add boiling water and process for 10-15 seconds.
- Stir in sesame seeds.
