Mexican Casserole
- 1 lb. ground beef
- 1 Tbsp. minced onion
- 1/2 tsp. garlic powder
- 2 (8 oz.) cans tomato sauce
- 1 c. chopped or sliced olives
- 1 c. cottage cheese
- 1 c. sour cream
- 3 to 4 canned green chilies, chopped
- 1 (6 1/2 oz.) pkg. tortilla chips
- 3 c. grated Monterey Jack cheese
- Fry beef; drain off fat.
- Add onion, garlic, tomato sauce and olives to beef.
- Combine in bowl the sour cream, cottage cheese and green chilies. Crush tortilla chips slightly, reserving a few whole ones for garnish.
- Place 1/4 chips in bottom of well buttered or sprayed 2 1/2-quart casserole.
- Add 1/4 meat mixture; cover with 1/4 sour cream mixture.
- Sprinkle with cheese.
- Repeat layers.
- Bake, uncovered, at 350u0b0 for 30 to 35 minutes, or cook in microwave for approximately 7 minutes.
- Turn and cook 7 minutes more.
