Amazingly Chewy Chocolate Chip Cookies
- 4-3/4 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1-1/2 cups salted butter, melted and then cooled (but still liquid)
- 1-1/2 cups packed golden brown sugar
- 1 cup granulated (white) sugar
- 2 vanilla flavored pudding snack cups (8 oz. total)
- 4 tsps. pure vanilla extract
- 2 large, unbeaten eggs
- 2 large, unbeaten egg yolks
- 2-1/2 to 3 cups semi-sweet chocolate chips
- Preheat oven to 350 degrees. Line baking sheet(s) with parchment paper or silicone baking liner (Silpat/Roulpat). (Greasing is an option, too, but it is more messy and difficult to deal with.)
- In a big bowl, sift together flour, baking soda and salt.
- Separately, in a big bowl, cream together the melted butter and sugars using a wooden spoon or spatula. (Note: this recipe does not require an electric mixer.) Stir in the contents of the pudding snack cups, then add in the vanilla extract and mix well. Stir in the unbeaten eggs and yolks until just combined.
- Pour the flour mixture into the sugar mixture one cup at a time, being careful not to overmix. Finally, add the chocolate chips into the dough until just incorporated.
- Drop dough with a big spoon onto the lined cookie sheet, shaping them into rough balls (1-1/2 to 2 ounces in size) about 3 inches apart. Bake for 12-14 minutes or until edges are golden brown. Once done, take out the baking sheet and leave the cookies in it for five to ten minutes before transferring them to a cooling rack to cool even more. Wash baking sheet with cold water and dry thoroughly before lining it again and baking the next batch. (Having two baking sheets makes this process go faster by eliminating "down-time" in the oven between batches.) Enjoy!!!
