Chickpea And Chicken Stew
- 3 tblsp of virgin olive oil
- 1 large onion finely chopped
- 1 tblsp of basil or 2 fresh leaves
- half tblsp of oregano
- kayene pepper* spice to your desire
- tsp paprikra
- 1 slice of bacon
- 2 cloves of garlic finely chopped.
- 1 large can of san marzano peeled tomatoes
- 2 cans of goya chick peas
- 1 large chicken breast
- In a medium sauce pan over low heat, heat the oil and then cook the onions, garlic and bacon(6 to 8 min.) Add the tomato sauce then add seasoning. stir. Add the chickpeas without liquid
- stir and simmer for 10 minutes. While simmering grill chicken and cut up in cubes then add to stew for 2-3 min. Add seasoning to taste.
