Collard Greens And Kielbasa Sausage
- 8 strips bacon
- 2 medium onions, chopped
- 1 green bell pepper, chopped
- 1 pound kielbasa sausage or chorizo, sliced
- 3 tablespoons beef stock granules
- 1 tablespoon garlic
- 1/4 cup olive oil
- 1 teaspoon hot sauce such as Tabasco (use more if you like more spice)
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons balsamic vinegar
- 2 tablespoons sugar
- 2 (16-ounce) packages collard greens, washed and cut up
- 2 ham hocks
- 1 (16-ounce) can chopped tomatoes
- Special equipment: slow cooker
- In large skillet, brown bacon. Add onions, green bell pepper, and sausage and simmer 10 minutes. Add beef granules, garlic, olive oil, hot sauce, pepper, balsamic vinegar, and sugar.
- Place collard greens, ham hocks, tomatoes, and 2 cups hot water into slow cooker. Add ingredients from skillet and stir to combine well. Cover and simmer, stirring occasionally, until collard greens are tender. Cooking time is usually 7 hours on low or 4 hours on high. Remove ham hocks and serve.
