Oven Baked Scrambled Eggs
- 12 eggs
- 1/3 c. milk
- 1/4 c. melted butter
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. nutmeg
- 1 (16 oz.) pkg. Green Giant American Mixtures California style frozen cauliflower, carrots and asparagus
- 6 oz.( 1 1/2 c.) shredded Gruyere or Swiss cheese
- 1/3 c. chopped green or Vidalia onions
- Heat oven to 350u0b0.
- Generously grease 13 x 9-inch (3-quart) baking dish.
- In large bowl combine eggs, milk, butter, salt, pepper and nutmeg; beat well.
- Stir in frozen vegetables, 1 cup of the cheese and onions; mix well. Pour into greased baking dish. Bake at 350u0b0 for 25 to 30 minutes; or until eggs are just set in center, stirring twice during baking.
- Sprinkle with remaining 1/2 cup cheese.
- Let stand 2 to 3 minutes or until cheese is melted. Yields 12 servings.
