Chicken San Souci
- 5 lb. chicken breast
- celery tops
- salt
- 2 boxes Uncle Ben's wild rice
- 1 large chopped onion
- butter
- 6 Tbsp. flour
- 3 cans cream of mushroom soup
- 2 1/2 soup cans milk
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 cans button mushrooms
- 1 lb. sharp cheese, grated
- Cook the chicken breast with celery tops and salt in water until done.
- Drain, remove from bone and set aside.
- Cook the wild rice according to package directions.
- Saute the onion in butter; remove from the skillet.
- Add more butter (I use a stick) and blend in the flour.
- Stir in the soup, which has been mixed with the milk.
- Add salt, pepper, mushrooms and sauteed onion; set aside.
