Nanzee'S Cold Sesame Noodles With Mint

  1. Cook pasta until done. Whisk together sesame oil, tahini, sugar, soy sauce, rice vinegar and hot pepper sauce. Thin with hot water to the consistency of heavy cream.
  2. Rinse noodles under cool water. Drain completely. Add peeled, chopped cukes, peppers, ginger, and stir in sauce to coat. Add a handful or two of fresh julienned mint and mix thoroughly. Add salt and black pepper to taste. Top with scallions. Chill if you have time!
