Graham Wafer Cake = Bars
- 9 x 13 cake pan
- shortening or butter to grease pan
- CAKE
- 1 cup butter
- 1 cup white sugar
- 4 tbspn (1/4 cup) cocoa
- 2 eggs
- 1 pkg graham wafers - crushed
- 4-6 ozs. marichino cherries - chopped
- ICING
- 3 cups icing sugar
- 2 tbspn butter
- 3 tbspn cocoa
- hot water as required
- melt butter over low heat, add sugar and cocoa..until dissolved
- remove from stove, wisk in one egg at a time...return to stovetop, simmer and stir for 1 minute
- remove from stove, add "crushed" graham wafers and Marichino Cherries
- PRESS INTO 9X13 "GREASED" CAKE PAN... CHILL
- ICING:
- Mix Butter and Icing Sugar... until smooth... add cocoa... if needed... add small amounts of hot water to enable spreading of icing.. Ice Cooled cake..
- Cut into squares
