Pistacio And Dried-Cherry Biscotti
- 2 cups flour
- 1 cup sugar
- 1/2 cup oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 3 tablespoons vegetable oil
- 2 tablespoons orange and lemon zest
- 1.5 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups dried cherries and pistachios
- Preheat oven to 350o. combine first 6 ingredients in miixer for 30 seconds.
- In separate bowl, whisk eggs and next 5 ingredients, then add egg mixture to flour mixture
- transfer to lightly floured surface and divide in half using floured hands. Shape each half into a 16" long log.
- Transfer logs to baking sheet, flatten into 2" wide strip. Bake, rotating sheet halfway through until browned and set, about 30 minutes.
