Broccoli Lasagne
- 6 Tbsp. margarine
- 1/2 c. flour
- 1 tsp. onion powder
- 2 c. milk
- 12 oz. Cheddar cheese
- 16 oz. small curd cottage cheese
- 1/3 c. Parmesan cheese
- 1 large egg
- 8 lasagne noodles (8 oz. uncooked)
- 1/3 can ripe olives, drained and sliced
- 2 pkg. (10 oz.) frozen chopped broccoli
- paprika
- Place broccoli boxes on paper towel.
- Microwave on High (9 minutes), turning once.
- Drain and squeeze out moisture.
- Discard liquid.
- In a 1-quart mixing bowl, microwave margarine for 1 minute on High.
- Whisk in flour until smooth and onion powder; whisk in milk.
- Microwave on High 6 minutes, whisking midway.
- Whisk and add Cheddar cheese until melted.
- Blend in broccoli.
- Set aside.
