Seared Sea Bass With Orange Caper Butter And Arugu
- 4 sea bass fillets
- 1 tsp. olive oil
- 1 Tbs. butter
- flour for dusting fish
- sea salt & freshly ground pepper
- 1 garlic clove, minced
- 1 tsp. grated orange peel
- juice of 1 orange
- 1/4 c. white wine
- 2 Tbs. capers
- 1 bag fresh baby arugula
- Heat suate pan and add oil and 1/2 Tbs. butter. Dust fish lightly with seasoned flour. Sear fish on one side until lightly browned and crisp, about five minutes. Turn fish over and add garlic, capers and orange peel to pan. When fish flakes easily,remove from pan. Add orange juice and wine to pan. Let reduce by half, then add remaining 1/2 Tbs. butter. Place arugula on four dinner plates, place fish on top, and pour sauce over.
