Orange Sugar Cookies
- 2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 c. sugar, divided
- 1/2 c. margarine, soft
- 1 tsp. vanilla extract
- 2 tsp. grated orange peel
- 1/4 c. Egg Beaters (egg substitute)
- 1 tsp. orange extract
- In small bowl, combine flour and baking soda; set aside.
- In medium bowl, with electric mixer at medium speed, beat 1 sugar, margarine, orange peel and vanilla until creamy.
- Add Egg Beaters; beat one minute.
- Gradually stir in flour mixture until blended, mix in orange extract.
- Chill dough 1 hour.
- Shape dough into balls and roll in colored sugar, place 2 inches apart on lightly greased cookie sheet, press balls with fork.
- Bake at 375u0b0 for 8 to 10 minutes until light golden brown.
- Makes about 3 1/2 dozen. 2 grams fat, 60 calories per cookie.
