Gardeners Pie
- 2 sweet potatoes
- 3 potatoes mashed (for top)
- 1 large zucchini (peel & dice)
- 1 onion
- 3 cloves garlic
- 1 can chickpeas (drained)
- 1 cup roughly chopped string beans
- 3 Tbsp tomato sauce
- 1 Tbsp worcestershire sauce
- 1 Tbsp curry powder
- 2 Tbsp sweet soy sauce
- 2 tsp butter (melted)
- salt & pepper
- 1. Peel and dice sweet potaoes and par boil. Drain and set aside.
- 2. Slowly brown diced onion and crushed garlic in a large pot with some oil.
- 3. To this pot, add zucchini, sweet potatoes, chickpeas, and beans. Stir over low heat.
- 4. Add sauces & curry powder and stir well.
- 5. Place vegetable mix in a casserole or pie dish and cover with mashed potatoes. drizzle butter over mash and sprinkle with salt and pepper.
- 6. Crisp up pie in a preheated oven (200 degrees celcius) or under a grill cooker until browned.
