Chili With Beans
- 1 pound ground beef or ground turkey
- 2 teaspoons olive oil
- 1 medium onion diced
- 1 bell pepper diced
- 2 carrots pealed and finely diced(I like mine chopped fine in food processor)
- 2 cloves garlic finely chopped
- 1 (12-ounce) bottle of beer, preferably a medium or dark ale
- 1 can pinto beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 28 oz can of crushed tomato
- 1 table spoon tomato paste
- 15 tortilla chips
- 1 to 2 chipotle peppers canned in adobo sauce, chopped
- 2 tablespoon adobo sauce (from the chipotle peppers in adobo)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 2 cups of beef stock
- salt and pepper to taste
- Brown beef in a large skillet over medium high heat, drain fat and set a side.
- In a large heavy pot over medium heat, heat olive oil and saute onion, bell pepper and carrots until tender about 10 minutes. Add garlic, cumin and oregano and saute for another 1 to 2 minutes. Add beef, beer, crushed tomato, beef tock, tomato paste, tortilla chips, chipotle peppers, adobo sauce and chili powder and simmer over medium low heat for at least 1 hour. Add pinto beans and kidney beans and simmer for another 30 minutes. Salt and pepper to taste.
