Chili With Beans

  1. Brown beef in a large skillet over medium high heat, drain fat and set a side.
  2. In a large heavy pot over medium heat, heat olive oil and saute onion, bell pepper and carrots until tender about 10 minutes. Add garlic, cumin and oregano and saute for another 1 to 2 minutes. Add beef, beer, crushed tomato, beef tock, tomato paste, tortilla chips, chipotle peppers, adobo sauce and chili powder and simmer over medium low heat for at least 1 hour. Add pinto beans and kidney beans and simmer for another 30 minutes. Salt and pepper to taste.
