Applesauce Cake
- 2 1/2 c. sifted flour
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 1/2 tsp. soda
- 1/2 tsp. salt
- 3/4 c. polyunsaturated margarine
- 1 c. light brown sugar, packed
- 1 carton Morning Star Scramblers (1/2 c.)
- 15 oz. jar applesauce
- 1 c. seedless raisins
- 1/2 c. chopped walnuts
- Combine and sift flour, spices, soda and salt.
- Cream margarine.
- Add brown sugar gradually and cream well.
- Add Scramblers, 1/2 cup at a time.
- Beat well after each addition. Add the dry ingredients alternately with applesauce, blending well after each addition.
- Stir in raisins and walnuts.
- Pour into a well-greased and floured 13 x 9 x 2-inch pan.
- Bake at 350u0b0 for 35 minutes or until done.
- Cool 10 minutes.
- Remove from pan and cool on rack.
