Linguini With Asian Clam Sauce
- 1/4 c olive oil
- 2 oz thin sliced pancetta
- 1 T grated fresh ginger
- 4 minced garlic cloves
- 1 T black beans
- 2 t sugar
- 2 T soy sauce
- 3 T sherry
- 2 C chicken broth
- 30 sm scrubbed clams/3 sm cans
- 3/4 lb linguini
- 1 T cornstarch w 2T water
- 1/2 c chopped scallions
- 2 t sesame oil
- Bring large pot of water to boil.
- Heat oil on med in another saucepan. Add pancetta, cook 3 min, add ginger, garlic, beans. Cook on low 1 min. Add sugar, soy, sherry, broth, and clams. Cover and cook on high till clams open. Take out clams, chop,
- Cook linguini till done. Boil clam mixture and add cornstach mix to thicken. Simmer one min. Add clams and sm amt of juice, scallions, sesame oil, and pasta. Toss and serve.
