Creamy Vegan Carrot Soup With Coconut
- 2 - 3 large carrots chopped small
- 1 onion, chopped small
- 2 tablespoons fresh ginger minced
- 1 1/2 tsp curry powder
- 1/2 tsp cumin
- 1 tsp garam marsala (or cinnamon, cloves, and corriander)
- 1 3/4 c veg broth
- 1 14 oz czn coconut milk (not sweetened)
- sea salt to taste
- saute onions for a minute or so, add carrots then spices then ginger.
- Add broth and simmer for 20 -25 minutes until carrots are soft.
- allow to cool slightly, thn puree in blender in batches.
- Return to heat, add coconut milk until well combined.
- season generously with sea salt
- Serve hot or cold, Soup will thicken as it cools. If serving cold you might want to add more liquid.
