Polvorones
- 4 1/2 c. sifted flour
- 3/4 c. sugar
- 2/3 c. pure lard
- 2 whole eggs
- 2 tsp. ground cinnamon
- cinnamon and sugar mixture
- Mix flour and sugar in a large bowl.
- Add lard to dry ingredients and blend well.
- Add eggs and knead by hand in bowl until ingredients are blended and dough is smooth.
- Pinch off small pieces of dough and roll into small balls about the size of a nickel.
- Place on ungreased baking sheet and bake about 10 to 12 minutes at 350u0b0 (until golden brown).
- Remove sheets from oven onto wire racks and cool slightly.
- Using a spatula, remove two or three cookies at a time from cookie sheet.
- Gently place on platter on which you have put the cinnamon and sugar.
- (One cup sugar and 1 1/2 teaspoons cinnamon, mixed.)
- Coat generously and with slotted spoon, remove to serving platter.
- Makes six to seven dozen.
