Mexican Bean Dip
- 1 can vegetarian red beans
- 1 medium onion
- 2 Tbsp. oil
- 1/2 c. picante sauce
- 1/2 c. shredded Monterey Jack cheese
- 1/2 c. shredded Cheddar cheese
- 1/3 c. sour cream
- 1 bag corn tortilla chips
- 1 bell pepper
- 3 tsp. taco seasoning
- 1 tsp. paprika
- In medium saucepan, heat oil.
- Saute bell pepper and onion for 2 minutes.
- Lower heat and add paprika and taco seasoning.
- Stir well.
- Add can of beans and mash with potato masher.
- Add 1/3 cup water.
- Cover and simmer for 8 minutes on low heat.
- Add picante sauce and serve in shallow round bowl.
- Top with both cheeses and heat in microwave for 3 minutes.
- Top with sour cream and serve with chips.
