Crusty Scalloped Corn
- 300 ml soda cracker crumbs, rolled finely
- 125 ml margarine, melted
- 15 ml onion, finely chopped
- 50 ml green pepper, finely chopped
- 30 ml margarine
- 30 ml flour
- 2 ml salt
- 5 ml sugar
- 250 ml milk
- 1 (16 oz.) can whole kernel corn (liquid included)
- 2 eggs
- Preheat oven to 200u0b0C.
- Combine crumbs and melted margarine. Save 125 ml crumb-margarine mixture for topping.
- Press crumbs evenly on sides and bottom of pie pan.
- Saute onion and green pepper in margarine.
- Blend in flour, salt and sugar.
- Slowly add milk; cook and stir until thickened.
- Mix in corn and eggs.
- Stir well.
- Pour corn mixture into crumb crust.
- Top with remaining crumbs.
- Bake 30 minutes or until a knife inserted (off center) comes out clean.
