Mountain Man Omelette
- 1# Pork Sausage
- 1# Bacon
- 1 Lg. Diced Yellow Onion
- 3 Cloves Minced Garlic
- 1 Chopped Green Bell Pepper
- 1 Chopped Red Bell Pepper
- 2 C Mushroom Slices
- 18 Eggs
- 3/4 C Milk
- 3 C Grated Cheddar Cheese
- Salt, Pepper, Picante Sauce
- Heat 12" Dutch Oven until very hot. Fry sausage until brown - remove. Cut bacon into 1" slices, fry until brown. Remove excess grease. Add sausage, onion, garlic, bell peppers, mushrooms, bacon. Saute until vegatables are tender. Mix eggs and milk - pour into Dutch Oven. Cover, bake - using 8 briquettes under and 15 on top for 20 min. Spread cheese over eggs. Cover and let stand until cheese is melted. Use picante sauce as desired
