Spicy Lentil Soup

  1. Add: 1 can Rotel tomatoes, 1 quart of stock (chicken, veggie), 1 cup
  2. of lentils or 3-4 diced potatoes. Sometimes I add meat, spinach, whatever I have to use up. You could also use leftover rice as a substitute for the lentils.
  3. Bring to a boil and simmer for 30 min or until lentils are done. Sometimes I add a can of coconut milk or plain yogurt.
  4. You can serve with fresh cilantro or parsley, dried coconut, whatever sounds good.
  5. Enjoy!!!
