Spicy Lentil Soup
- Saute in olive oil:
- diced onion(1-2)
- diced celery (2-4-stalks)
- diced carrots (2-3)
- Cook until translucent, then add 2 chopped apples and cook briefly.
- Wisk in:
- 1 T curry powder
- 1 tsp powdered ginger
- 1 tsp cumin
- 1 tsp coriander,
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 2-3 minced cloves of garlic
- 1 T flour
- Add: 1 can Rotel tomatoes, 1 quart of stock (chicken, veggie), 1 cup
- of lentils or 3-4 diced potatoes. Sometimes I add meat, spinach, whatever I have to use up. You could also use leftover rice as a substitute for the lentils.
- Bring to a boil and simmer for 30 min or until lentils are done. Sometimes I add a can of coconut milk or plain yogurt.
- You can serve with fresh cilantro or parsley, dried coconut, whatever sounds good.
