Lobster Cakes
- MEASUREttINGREDIENT
- 3 PoundsttLobster Meat (cooked and diced)
- 1 Eachttted Bell Pepper, minced
- 1/2 Cupttted Onion, minced
- 1/2 Cuptttelery, minced
- 1 teaspoonttGarlic, minced
- 3/4 Cuptttharp cheddar cheese (grated)
- 1/4 Cuptttresh Cilantro Leaves, minced
- 1-2 TeaspoonttHot Sauce
- 6 OuncesttCream Cheese
- 1/2 Cuptttapanese Mayonnaise (or regular mayonnaise)
- 2 Eachtttggs, whipped
- 2 Cupstttresh Bread Crumbs (or more if needed for proper consistency)
- To Tastetttalt
- To Tastetttresh Ground Pepper
- Flour for Dusting
- Oil for Frying
- 1)tombine all ingredients (except for flour and oil) in a large bowl, being careful not to over-mix.
- 2)tortion out lobster mixture using a large ice cream scooper and shape into 3 inch cakes, set aside.
- 3)tlace a large skillet over high heat and add enough oil to cover the bottom of the pan.
- 4)tust each portioned cake with flour and place into the hot skillet, turning once they have turned golden brown. Remove from skillet and place onto a sheet pan.
- 5)tnjoy.
