Lobster Cakes

  1. 1)tombine all ingredients (except for flour and oil) in a large bowl, being careful not to over-mix.
  2. 2)tortion out lobster mixture using a large ice cream scooper and shape into 3 inch cakes, set aside.
  3. 3)tlace a large skillet over high heat and add enough oil to cover the bottom of the pan.
  4. 4)tust each portioned cake with flour and place into the hot skillet, turning once they have turned golden brown. Remove from skillet and place onto a sheet pan.
  5. 5)tnjoy.
