Very Cheesy Casserole
- 2 c. cooked soybeans
- 2 c. cooked brown rice
- 4 lightly beaten eggs
- 2 c. (1 lb.) Ricotta or cottage cheese
- 1 c. grated Mozzarella cheese
- 1/2 lb. chopped mushrooms
- 1 c. chopped onion
- 2 to 3 cloves garlic, crushed
- 1 tsp. each: basil, thyme and marjoram
- 2 Tbsp. soy sauce
- salt and pepper to taste
- 4 Tbsp. butter
- 1/2 c. Parmesan cheese
- 1/2 c. fine bread crumbs
- 2 medium tomatoes, thinly sliced
- Saute onion, garlic, mushrooms and herbs in butter, until onion is soft.
- Combine all but last 3 ingredients.
- Spread mixture in large, buttered oblong pan.
- Top with sliced tomatoes. Combine Parmesan cheese and bread crumbs.
- Bake in a 350u0b0 oven for 40 minutes.
