Pistachio And Ginger Slice
- 1/2 cup self-raising flour
- 1/2 cup plain flour
- 1 cup rolled oats
- 2/3 cup shredded coconut
- 2/3 cup,firmly packed brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/3 cup sultanas
- 1/2 cup crystallised ginger
- 1/2 cup pistachios
- 150g butter, melted
- 1 egg, lightly whisked
- Preheat oven to 180C
- Line slice tin
- Blitz sultanas, ginger and pistachios in food processor until finely chopped
- Add other dry ingredients and blitz until combined
- Add egg and blitz until combined
- Then add butter and blitz until all combined
- Press into tray
- Bake for 20 mins or until brown on top
- Cool in tray
- Cut into small squares
