Healthy Zucchini Bread
- 3 cups whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 tablespoons ground cinnamon
- 1/4 teaspoon baking powder (2 parts cream of tartar, 1 part baking soda)
- 3 eggs
- 1 cup (scant) white sugar
- 3 teaspoons vanilla extract
- 1 cup fruit puree (used peach, could use apple sauce)
- 1 tbsp coconut oil
- 3 cups grated zucchini
- 1 cup chopped walnuts (optional)
- 1.treheat oven to 350 degrees F (175 degrees C).
- 2.tift together flour, salt, soda, cinnamon, baking powder.
- 3.teat eggs. Add and mix well sugar, vanilla, and oil substitute (fruit and coconut oil) Add zucchini to egg mixture. Add dry ingredients, mixing well. Stir in nuts if desired. Pour into greased loaf pan.
- 4.take at 350 degrees F (175 degrees C) for 35 mins
