Shrimp With Tomato And Feta
- 1-1/2 lb peeled ,deveined shrimp
- 1-2 tbl olive oil
- 4-6 lg ripe tomatoes diced
- 1 med onion chopped
- 1-2 cloves crushed garlic
- 3tbl chopped flat leaf parsley
- 1 cup crumbled feta
- crusty french or italian bread
- salt & pepper to taste
- in lg skillet saute onion in olive oil over med heat until softened but not really browned.
- add garlic saute 1 min.
- add tomatoes and simmer over low heat until sauce has thickened somewhat 15-20 min.
- add shrimp and simmer until cooked through and opaque.
- stir in feta and simmer 1 minute until heated through and just beginning to melt a bit. season with salt and pepper to taste. (very little salt will be needed due to the feta)
- sprinkle with parsley.
- serve in flat soup bowls with bread to mop up sauce.
- goes well with a tossed salad
- and red wine. fruit for dessert
