Moroccan Stew
- 1 cup onions
- 1/2 cup chopped celery
- 1/2 cup chopped green pepper
- Garlic ++
- Add and cook:
- 3 cups broth
- 3 cups cubed sweet potatoes
- 1 can diced tomatoes 28 fluid oz.
- 1 can chick peas
- Add 1 tbs. lemon juice
- 2 tbsp peanut butter
- 1 tsp. ginger, cumin, curry, coriander seed, chili powder, salt, pepper or more if you like spicey.
- At end add 1/4 cup or more raisins
- 1/2 cup fresh chopped coriander
- Saute onions, celery, green pepper and garlic. When veggies are slightly soft, add broth, canned tomatoes and sweet potatoes. Stir in spices, lemon juice, raisins and peanut butter. Cook till thickened!
- Add cilantro at the end.
