Chocolate Zucchini Cake
- 1/2 c. oil
- 1/2 c. margarine
- 13/4 c. sugar
- 2 eggs
- 1 t. vanilla
- 1/2 c. sour milk*
- 21/2 c. flour
- 1 t. baking soda
- 1/4 c. cocoa
- 1 t. cinnamon
- 1/2 t. salt
- 2 c. grated zucchini (about 1 medium)
- 1/2 c. chocolate chips
- 1/2 c. chopped nuts
- Combine oil, margarine, sugar, eggs and vanilla in a large mixing bowl. Add sour milk, flour, cocoa, baking soda. salt and cinnamon. Mix until smooth. Stir in zucchini. Pour into a greased and floured 9 x 13" pan. Sprinkle with chocolate chips and nuts. Bake at 350 degreesfor 35-40 minutes.
- * To make sour milk, pour 1/2 T. lemon juice in the bottom of the 1/2 cup measuring cup. Fill up with milk. Let set for a few minutes. The milk will get thick and curdle.
