Broccoli Egg And Cheese Casserole
- 3 Tbsp. margarine
- 8 large eggs
- 3 Tbsp. flour
- 1/2 lb. grated Cheddar cheese
- 1 1/2 c. broccoli florets, blanched
- 1 loaf day old French bread, cubed (3 c.)
- 3 c. milk
- 1 Tbsp. dry mustard
- 1/4 lb. Swiss cheese, grated
- 2 c. cooked ham, diced into 1-inch cubes
- In large skillet over medium heat, melt margarine and toss in bread cubes, stirring until coated well.
- Brown lightly. Continue to stir until evenly brown.
- Set aside.
- In bowl, beat eggs, milk, flour and mustard together until well mixed.
- Add cheese, broccoli and ham.
- Place bread in a greased 8 x 11-inch pan.
- Pour egg mixture over top.
- Refrigerate overnight.
- Preheat oven to 350u0b0.
- Bake 1 hour or until eggs are set.
- Yield:
- 6 to 8 servings.
