Pumpkin Chocolate Chip Pecan Cookies
- 1 cup canned pumpkin
- 1/2 cup white sugar
- 1/2 cup applesauce
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon milk
- 1 tablespoon vanilla extract
- 1 cup semisweet chocolate chips
- 1/2 cup chopped pecans
- Preheat oven to 350 degrees F.
- In large bowl, combine all ingredients in the order listed and stir well with wooden spoon or rubber spatula until smooth and well mixed.
- Grease cookie pans with cooking spray and place spoonful of dough onto the pan, about 2 inches apart.
- Bake for 10-12 minutes or until the cookies are lightly brown.
