Sweet Potato Pie
- 1 pie crust (Frozen, deep dish, or if you're good, you make it from "scratch")
- 2 medium sized sweet potatoes
- 4 eggs
- 1 stick butter
- 1 cup sugar
- 1-1/2 teaspoon vanilla
- 1 teaspoon lemon
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/2 cup Carnation milk
- Preheat oven to 375 degrees. Boil sweet potatoes (whole and in the skin) until well done. Let cook enough to touch and peel, removing skin and any bruising. Put potatotes and butter in mixing bowl and blend together. Add eggs, one at a time, beating well after each addition. Add sugar and beat approximately one minute. Add vanilla, lemon, baking powder and salt, and stir only until blended. Pour into unbaked shell and bake for about 40-50 minutes until firm. (Try not to open oven during baking. Turn on the light and watch it rise and set!)
