Gumbo
- 1 1/2 c. chopped green, yellow and red sweet peppers
- 1/2 c. butter or margarine
- 1 c. chopped onions
- 1 1/2 c. chopped celery
- 2 cloves garlic
- 2 to 3 qt. tomato sauce with chopped tomatoes
- 8 to 10 c. water
- 1 lb. backfin crabmeat
- 1 lb. fresh okra
- 4 fresh tomatoes, diced
- 2 lb. jumbo shrimp
- 2 lb. frozen baby shrimp
- 4 hard-shelled crabs
- 1/2 lb. smoked turkey sausage
- 1 lb. hot Italian turkey sausage
- 3 to 4 Tbsp. gumbo file
- seasonings to taste
- rice
- Tabasco
- crackers
- Melt butter or margarine.
- Saute peppers, onions, celery and garlic.
- Add tomato sauce with chopped tomatoes and fresh, diced tomatoes.
- Add water and simmer.
