Red Snapper With Cilantro And Parsley Sauce

  1. -Preheat oven to 400 degrees
  2. -Rinse fish and pat dry
  3. -Drizzle oil on both sides
  4. -Salt and pepper
  5. -Place snapper in glass baking dish
  6. -Pour clam juice over fish
  7. -Cover with aluminum foil and place in oven
  8. -Bake 15 minutes or until fish flakes easily with fork
  9. -Dice shallots and place in small bowl
  10. -Pick cilantro off stems and mince
  11. -Place in bowl with shallots
  12. -Add parsley
  13. -Juice lime in bowl
  14. -Stir mixture and place in fridge
  15. -Remove fish from oven
  16. -Spoon cilantro mixture onto fish and serve!
  17. -Serve with roasted potatoes
